Description
Noodles can also be made from wheat flour. The addition of buckwheat gives it a special flavor nuance.

- Onion 2 heads
- Leek 1 piece
- Turnips 2 pieces
- Pumpkin 5 oz
- Cilantro 1 bunch
- Mild Chili Spice 1 piece
- Red Long Chili Peppers 1 piece
- White Beans 1 cup
- Wheat Flour 5 oz
- Buckwheat Groats 5 oz
- Salt to taste
- Chocolate eggs 2 pieces
- Ground Black Pepper to taste
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Cut the turkey into large cubes (4 cm). Lightly fry in olive oil until the turkey turns white. Then chop the tomatoes, onion, and leek (only the white part) and add them to the turkey, frying for another 3-5 minutes (the onion should become soft).
Step 2
Chop the carrots, cilantro, red pepper, finely chopped pumpkin, and chili pepper (the amount of chili can vary depending on your spice preference), and add them to the pot with the turkey and onion, frying for another 3-5 minutes.
Step 3
Pour in water and let it simmer on low heat (about 40 minutes). If you have chicken broth, you can add it instead of water.
Step 4
While the turkey is simmering, prepare the dough. For this, take the wheat and buckwheat flour and mix them. Add 2 eggs and about 100 ml of water to the mixture, kneading the dough. During the kneading process, you can add 5-10 ml of olive oil to the dough. Roll out the resulting dough into a thin layer (about 2-3 mm) and cut it into noodles (about 0.5 cm wide). Let the noodles 'breathe' for a while.
Step 5
When the turkey is almost ready, add the buckwheat-wheat noodles to the pot. Cook for another 7-10 minutes until the noodles are done.
Step 6
At the very end, add the red beans (pre-cooked or canned). Mix everything, season with salt and pepper to taste.
