Turkey Fajitas with Guacamole

Ingredients

  • Tortillas 8 pieces
  • Chicken fillet 20 oz
  • Lime 3 pieces
  • Toasted Cumin Seeds 1 tablespoon
  • Coriander essential oil 1 tablespoon
  • Nigella Seeds ½ tablespoon
  • Olive Oil 4 tablespoons
  • Flaky sea salt a pinch
  • Avocado 1 piece
  • Tomatoes 2 pieces
  • Basil 2 stems
  • Mint 2 stems
  • Mild Chili Spice 1 piece
  • Sweet Pepper 1 piece
  • Onion 2 heads
  • Canned Jalapeño Peppers 0 oz
  • Cilantro ½ bunch

Step-by-Step Guide

Step 1

Slice the turkey fillet into thin strips and marinate.

Step 2

For the marinade, toast the cumin, coriander, and fennel seeds in a dry skillet.

Step 3

Grind them in a mortar with a pinch of coarse salt.

Step 4

Juice 2 limes.

Step 5

For the marinade, mix the spices, lime juice, and 2 tablespoons of olive oil.

Step 6

Place the turkey in a plastic container and pour the marinade over it. Seal with a tight lid and shake well. Refrigerate for a few hours, ideally overnight.

Step 7

Clean the red and yellow peppers, remove the white veins, and cut into strips. Slice the onion into half-rings.

Step 8

Sauté in 2 tablespoons of olive oil until soft.

Step 9

Prepare the guacamole.

Step 10

Juice 1 lime. Peel the avocado and immediately drizzle it with lime juice to prevent browning.

Step 11

Blend the avocado in a blender or food processor, adding the chopped tomatoes, basil, cilantro, and mint. Blend again. The consistency of the guacamole can vary, either chunky or completely smooth. Decide what you prefer.

Step 12

Preheat the oven to 210°F.

Step 13

Wrap the tortillas in foil and place them in the oven for 10-15 minutes. Remove from the oven and keep warm.

Step 14

Take the meat out of the refrigerator and place it in a colander to drain excess liquid.

Step 15

Heat a skillet (a wok can be used) and stir-fry the meat over high heat, stirring constantly, for about 5 minutes.

Step 16

Remove from heat and let cool slightly.

Step 17

Serve with canned jalapeños.
