Ingredients
- Chicken Drumstick 2 pieces
- Chicken Broth 10 fl oz
- Dry Champagne 10 fl oz
- Bouquet Garni 1 bunch
- Gullet 10 oz
- Butter 0 oz
- Ground clove 2 pieces
- Herbs 0 oz
- Morels 5 oz
- Anchovy fillet 2 pieces
- Capers 1 tablespoon
- Pitted olives 5 oz
Step-by-Step Guide
Step 1
Sear 2 large turkey drumsticks. Place them in a cast-iron pot, pour in the champagne and the same amount of broth. Add the bouquet garni, 2 cloves, season with salt and pepper, and cook on low heat without boiling for one hour.
Step 2
While the drumsticks are simmering, prepare the ragout: blanch the gullet, cut it into cubes, and sauté it in butter with finely chopped herbs and mushrooms. Pour in 100 ml of broth and the same amount of champagne and simmer for one hour on very low heat.
Step 3
Chop the anchovy fillets in oil, a tablespoon of capers, and a handful of pitted olives. Remove the saucepan from the heat and add the prepared mixture.
Step 4
Cut each drumstick in half and place them on a serving dish. Top them with the ragout.
