Description

Considering the comments that the minced meat turns out a bit tough, I changed the amount of cream in the recipe to 200 ml. The recommendation is to definitely add the cream gradually; the mixture should not be too runny! You should be able to form the cutlets by hand (with wet hands), but the cutlets themselves should have a tender texture, meaning that when forming, the mixture should resemble soft dough.

Ingredients

  • Cilantro 1 bunch
  • Chicken fillet 20 oz
  • Chicken Egg 1 piece
  • Onion 1 piece
  • Garlic 2 cloves
  • 10% cream 5 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Pass the turkey fillet, onion, and garlic through a meat grinder twice.

Step 2

Add the egg, salt, pepper, finely chopped herbs, and mix the minced meat well.

Step 3

Add the cream (at room temperature) and mix again.

Step 4

Knead the mixture; form firm cutlets.

Step 5

Fry in a small amount of olive oil.

Step 6

Serve hot (or reheat before serving). When cold, the juices solidify, and the cutlets become dry.
