Description

Dried chickpeas should be rinsed and soaked in cold water for at least 4 hours, preferably done the day before. You can also use canned chickpeas; in this case, just warm them up.   • Turkey 1 piece
  • Onion 1 head
  • Carrot to taste
  • Celery salt to taste
  • Garlic to taste
  • Cinnamon to taste
  • Ground Cumin to taste
  • Chickpea 1 can
  • Dried Chili Pepper to taste
  • Dried Apricots 5 oz

Step-by-Step Guide

Step 1

After seasoning with salt and pepper, sear the turkey meat on all sides until golden brown. It is preferable to do this in a heavy-bottomed pot. Remove the meat and set it aside.

Step 2

Reduce the heat to medium, add a little more oil to the pot. Add the coarsely chopped onion, carrot, and celery, and enjoy the sight.

Step 3

Add the spices. While the vegetables are softening, put the kettle on.

Step 4

Place the meat on top of the vegetables, pour boiling water over it, and add salt. Bring it back to a boil, then reduce the heat to low. Cook for 40 to 50 minutes.

Step 5

Now add the dried apricots and chickpeas. The warm liquid will help the apricots regain their fruity essence and impart all their honeyed sweetness to the dish.

Step 6

After adding the finishing touches, cook the stew for another 15 minutes.
