  • Cranberry 5 oz

Step-by-Step Guide

Step 1

In a saucepan, combine the following ingredients: passion fruit puree, sugar, ginger root (peeled and cut into matchsticks), canned pear, sliced, and syrup.

Step 2

Place a saucepan on the stove, bring it to a boil, reduce the heat to medium, and simmer gently for about 15 minutes.

Step 3

Then add cloves, whole peppercorns, and cranberries to the saucepan and cook for another 2 minutes. After that, add the diluted demi-glace to the sauce and simmer for about 5 more minutes. Remove the finished sauce from the heat.

Step 4

Season the tuna with salt and pepper, then drizzle with olive oil. Sear on a well-heated skillet for about 30 seconds on each side.

Step 5

Sauté bok choy, sweet peas, and Kenyan beans in a mixture of vegetable and butter with the addition of garlic oil for 1 minute.

Step 6

Arrange the sliced tuna on a plate, place the warm salad beside it, drizzle the fish with passion fruit sauce, and garnish with a lime wedge.
