Ingredients
- Bonito tuna fillet 5 oz
- Olive Oil 5 tablespoons
- Pear 1 piece
- Butter 0 oz
- Cinnamon 1 piece
- Brown Sugar 0 oz
- Freshly squeezed orange juice 5 fl oz
- Olive Oil 0 fl oz
- Ocean salt to taste
- Grated Ginger Root 2 teaspoons
Step-by-Step Guide
Step 1
Sprinkle the tuna with sea salt and freshly ground black pepper, brush with olive oil, and grill until medium doneness.
Step 2
Melt the butter, let it settle, and pour off the milk solids (cook with the yellow part of the butter).
Step 3
Chop the ginger, add it to the heated oil, and add the cinnamon stick.
Step 4
Dice the pear, sauté it, pour in the orange juice, add the sugar, and reduce until the juice thickens.
Step 5
When serving the tuna, brush it with garlic oil.
