Description

Trout with Ham, Almonds, and Garlic

Ingredients

  • Trout 5 lbs
  • Cotton Oil 15 fl oz
  • Serrano Chili 6 pieces
  • Wheat Flour 0 oz
  • Chopped almonds 8 tablespoons
  • Smoked Ham on the Bone 5 oz
  • Garlic 3 cloves
  • Chopped Sage Leaves 1 tablespoon
  • Medium-dry sherry 2 tablespoons
  • Lemon 1 piece
  • White Pepper (whole) to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Season the trout with salt and pepper.

Step 2

In a skillet, heat the oil and sauté the serrano ham, turning once, for 1–2 minutes. Remove the ham, let excess fat drain, and dry. Place a piece inside each fish.

Step 3

Dredge the trout in flour, shaking off the excess, and fry in the skillet on all sides until golden brown.

Step 4

Preheat the oven to 390°F. Transfer the fish to a baking dish, arranging them in a single layer.

Step 5

In a small skillet, pour in 120 ml of corn oil, heat it, and sauté the chopped ham, chopped almonds, finely chopped garlic, and parsley. Cook for 5 minutes until the garlic and almonds are lightly browned. Stir in the sherry and lemon juice and drizzle the sauce over the trout.

Step 6

Bake for 10 minutes and serve immediately without removing from the dish.
