Ingredients
- Fillet of Sturgeon 6 pieces
- Bacon 15 oz
- Lemon 2 pieces
- Tomatoes 2 pieces
- Ginger 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Saffron a pinch
- Asparagus 20 oz
- Dry White Wine 0 fl oz
Step-by-Step Guide
Step 1
Separate the trout fillet from the bones and marinate for half an hour in a mixture of salt, pepper, lemon juice, and ginger.
Step 2
Then slice the bacon thinly and place a slice on each marinated piece of fillet. Roll the trout into rolls and secure them with a skewer.
Step 3
Fry the resulting rolls on both sides in vegetable oil until golden brown, then keep them in a hot oven for another 5 minutes.
Step 4
For the side dish, boil the asparagus and then sauté it in butter and wine.
Step 5
Prepare the sauce: peel the tomatoes and remove the seeds, dice them, and sauté for 4 minutes in the pan where the asparagus was previously cooked. Season with salt and pepper to taste, add lemon juice, and strain through a sieve. Add saffron and mix thoroughly.
Step 6
Place the finished fish rolls and side dish on a plate, generously drizzling with the sauce.
