Ingredients
- Trout 1 piece
- Garlic 2 cloves
- Shallot 2 pieces
- Parsley to taste
- Lemon 1 piece
- Salt to taste
- Whole egg 3 pieces
- Butter 5 oz
- Asparagus to taste
Step-by-Step Guide
Step 1
Carefully clean the fish, leaving the head but removing the backbone. Inside the fish, place finely chopped garlic, shallot, parsley, and thinly sliced lemon. Season with salt.
Step 2
Carefully wrap in a maximum of 10 sheets of newspaper and bake in the oven until the newspaper becomes crispy and the fish is cooked.
Step 3
Remove from the oven, cut off the paper, and serve with the sauce, lightly sautéed asparagus, and lemon wedges.
Step 4
For the sauce, place the yolks over low heat, then slowly add the softened butter.
