Trofie with pesto and shrimp
Ingredients
- Wheat Flour 5 oz
- Tiger shrimp in brine 10 pieces
- Basil 0 oz
- Olive Oil 0 fl oz
- Garlic ½ cloves
- Pistachios 0 oz
- Goat cheese 0 oz
- Vegetable Oil 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
For the pasta, mix the flour with 90 ml of warm water, add a pinch of salt, knead the dough, and let it rest for an hour at room temperature covered with plastic wrap.
Step 2
Then pinch off small pieces of the dough, shape them into balls, and on a wooden board, turn them into spindle-shaped spirals by placing them under your palm and moving your hand diagonally towards the center of the ball.
Step 3
For the pesto, blend 25 grams of basil with olive oil, garlic, and pine nuts. Add semi-hard goat cheese and blend again.
Step 4
Sauté the peeled shrimp in vegetable oil and season with salt.
Step 5
Cook the trofie in salted water for 7–8 minutes, drain the water, add pesto, and toss to combine.
Step 6
Plate the dish, adding shrimp and basil.
