Description
Recipe from the show Food with Alex Smith, episode 24.
Ingredients
- Pearl barley 1 cup
- Water 1 cup
- Butter 5 oz
- Nuts 0 oz
- Honey 1 tablespoon
- Cranberry 0 oz
- Prunes 0 oz
- Lingonberry 0 oz
- Black Pomegranate Molasses 1 piece
Step-by-Step Guide
Step 1
Soak the pearl barley in water in a 1:1 ratio for 10-12 hours. In the same water, boil the barley until it's about 3/4 cooked, then drain the water, rinse the barley, and fill it with salted warm water. Cook with the addition of vegetable or butter. Milk can also be added.
Step 2
Chop any dried fruits you have at home (prunes, raisins) and mix them with the porridge. Add berries such as lingonberries, cranberries, and black currants (frozen berries can be used). Cook, stirring occasionally. Add honey. Cook until done (this process can take from half an hour to an hour).
Step 3
Crush the hazelnuts in a mortar, and separate the pomegranate into seeds. Add to the prepared kutya and mix. Let it steep for an hour and serve.
