Description

The weight of the potatoes is given in peeled form. You can use lamb instead of mutton. It can be cooked in the oven: bake at 160 degrees Celsius for two hours. You can add chopped carrots to the stew, and replace part of the water with Irish stout (for example, Guinness).

  • Rack of Lamb 10 oz
  • Onion 1 head
  • Salad Potatoes 10 oz
  • Chopped Sage Leaves 1 teaspoon
  • Thyme 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Water 10 fl oz

Step-by-Step Guide

Step 1

Rinse and cut the meat into evenly sized small pieces.

Step 2

Peel the onion and cut it into wedges.

Step 3

Rinse and peel the potatoes, then cut them into wedges.

Step 4

In a thick pot (preferably ceramic), layer the ingredients: first place the onion, then the lamb, and top with the potatoes. Season each layer with herbs (parsley and thyme), salt to taste, and lightly pepper.

Step 5

Slowly pour water into the pot with the layered ingredients. Cover with a lid.

Step 6

On the stove: bring the dish to a boil, then reduce the heat and simmer for one hour, covering the lid with a towel.

Step 7

Garnish with fresh parsley before serving.
