Onion, which children often dislike, is an important component of this traditional Spanish omelet. Try making the tortilla without onion for the first time — it will turn out just as good, and on your second or third attempt, add a bit of sautéed sweet white onion in olive oil to the potatoes.

  • Salad Potatoes 4 pieces
  • Olive Oil 2 tablespoons
  • Farm fresh eggs 6 pieces
  • Salt to taste

Step-by-Step Guide

Step 1

Wash the young or Egyptian white potatoes well and poke each potato several times with a fork. Place the potatoes in the microwave and cook on high power (900W) for 10 minutes. Let cool, peel, transfer to a bowl, and mash slightly with a regular fork. Whisk the eggs lightly. Add salt to taste.

Step 2

Preheat the grill. In a skillet, heat the olive oil and spread the potatoes evenly. Fry until the potatoes are well 'set' on the bottom. Then move the skillet to the grill and wait for a golden crust to form. Return the skillet to the stove and pour the egg mixture over the top. Cook for 5 minutes, then brown again in the grill.

Step 3

Let the finished tortilla cool slightly and cut into portions like a pie.
