Step-by-Step Guide

Step 1

Place parchment paper on a baking sheet, lay out the pastry, and let it rest in a warm place for 15 minutes.

Step 2

Cut the tomatoes in half, crush, peel, and finely chop the garlic, and separate the thyme and tarragon leaves from the stems.

Step 3

Heat 2 tablespoons of olive oil in a skillet, and sauté the tomatoes cut side down over high heat for 30 seconds.

Shape the pastry into a rectangle with your hands, slightly fold the edges, and prick the entire surface of the pastry with a fork.

Arrange the tomatoes on the pastry, sprinkle with thyme leaves, garlic, season with pepper, drizzle with the oil used for sautéing the tomatoes, and bake in a preheated oven at 445°F for 10 minutes.

Grate the lemon zest using a fine grater; place the feta in a bowl, mash with a fork, sprinkle with tarragon leaves, add the lemon zest, and mix.
