  • Breadcrumbs 0 oz
  • Garlic 0 oz
  • Passata Tomato Sauce 5 oz
  • Sugar 0 oz
  • Salt 0 oz

Step-by-Step Guide

Step 1

Scoring the tomatoes with an 'X', plunge them into boiling water for thirty seconds. Then transfer them to a bowl of ice water. Peel off the skin and dice into concasse (removing the seeds). Place in a sieve and allow to drain.

Step 2

Finely chop the green onions and parsley. Grate the onion on a fine grater and let it drain in a sieve as well. Mix everything together, add breadcrumbs, garlic, tomato paste, sugar, and salt. Mix again and let it rest in the refrigerator for three to four hours.

Step 3

In a deep skillet, heat the oil. Form patties weighing 80 grams each, coat them in flour, and gently place them in the oil. Fry for three to four minutes until a crust forms.

Step 4

Remove, place on a napkin to drain excess oil. As a garnish, you can serve concasse tomatoes mixed with onion and parsley.
