Tikka Masala with Tomato and Chili Salad
Ingredients
- Skin-On Chicken Breasts 15 oz
- Natural Yogurt 5 oz
- Tikka Masala 3 tablespoons
- Mixed salad greens 5 oz
- Tomatoes 3 pieces
- Chinese green beans 5 oz
- Onion 1 head
- Lemon 1 piece
- Chili Flakes a pinch
- Ground coriander 1 bunch
Step-by-Step Guide
Step 1
Boil the cut green beans in salted boiling water for a few minutes until tender. Drain and rinse under cold water. Pat dry.
Step 2
Cut each chicken breast into 5 long strips. In a bowl, mix the yogurt and tikka masala, then add the chicken and stir to coat. Cover with plastic wrap and refrigerate for 4 hours or overnight.
Step 3
Preheat the oven to 390°F. Line a baking sheet with parchment paper and place the chicken strips on it. Bake for 12–15 minutes until cooked through and golden brown.
Step 4
Arrange the salad greens and green beans on 4 plates, then top each with 5 pieces of chicken.
Step 5
In a bowl, combine the chopped tomatoes, finely chopped onion, chili, chopped cilantro, and drizzle with lemon juice. Mix well and serve with the chicken, garnished with lemon wedges.
