Ingredients
- Wide Rice Noodles 5 oz
- Sesame Oil 3 tablespoons
- Cucumber 1 piece
- Bell pepper 1 piece
- Carrots 2 pieces
- Peanuts 0 oz
- Ginger Root 0 oz
- Garlic 2 cloves
- Peanut Butter 3 tablespoons
- Tahini 2 tablespoons
- Wine Vinegar ¼ cup
- Soy Sauce 3 tablespoons
- Sweet Chili Sauce 1 teaspoon
- Sugar 1 tablespoon
- Water 0.3 cups
Step-by-Step Guide
Step 1
Prepare the sauce. Blend the ginger and garlic in a blender, add peanut butter (1 tablespoon), tahini, vinegar, soy sauce, chili sauce, sugar, and blend until smooth. Pour in warm water and lightly whisk.
Step 2
Cook the noodles until done. Drain in a colander. Return to the pot, drizzle with sesame oil, and mix.
Step 3
Sauté the sliced cucumber, carrots, and bell pepper for about 5 minutes.
Step 4
Add the nut sauce to the vegetables, mix well. Cover and let it sit for 5 minutes. Serve in bowls, garnished with peanuts.
