Thai Grilled Chicken
Ingredients
- Chicken fillet 4 pieces
- Ground coriander 1 bunch
- Lemongrass 2 pieces
- Lime 2 pieces
- Ground ancho chili pepper 1 piece
- Safflower Oil 2 tablespoons
- Grated Ginger Root ½ piece
- Garlic 3 cloves
- Ground Black Pepper to taste
- 1% Kefir 0 qt
- Ocean salt to taste
Step-by-Step Guide
Step 1
Marinate the chicken in kefir for 2 hours.
Step 2
Make several punctures with the tip of a knife in the pieces of chicken fillet.
Step 3
Zest two limes and squeeze their juice, grate a small piece of fresh ginger, remove the seeds from the green chili pepper, peel 3 cloves of garlic, and separate the cilantro leaves from the stems.
Step 4
Place the stems in a blender with the other ingredients and blend until it becomes a paste. Rub the chicken with this paste, ensuring it gets into the punctures.
Step 5
Place the chicken on a baking sheet and let it marinate for 15 minutes (during this time, prepare the grill). Once everything is ready, place the baking sheet at the edge of the grill so the chicken begins to cook without burning.
Step 6
Cook the chicken until it is half done, then remove it from the baking sheet and place it on the grill. Grill until fully cooked and a dark golden crispy crust forms. Grill the chicken over medium heat to ensure it cooks through and browns. Serve garnished with the remaining cilantro leaves.
