Thai Fried Chicken with Mushrooms

Ingredients

  • Cilantro ¼ cup
  • Rice Vinegar for Sushi ¼ cup
  • Brown Sugar 2 tablespoons
  • Red Curry Powder 2 teaspoons
  • Lime Juice 2 tablespoons
  • Chili Flakes a pinch
  • Chicken fillet 20 oz
  • Onion 10 oz
  • Vegetable Oil 1½ tablespoons
  • Carrot 10 oz
  • Fresh Mushrooms 10 oz
  • Fish Oil 1 tablespoon
  • Salt ½ teaspoon
  • Coconut Milk ½ cup
  • Peanut Sprouts 1 cup

Step-by-Step Guide

Step 1

In a bowl, mix vinegar, sugar, lime juice, curry paste, and red pepper flakes. Pour into a plastic bag and add the chicken cut into small pieces. Seal tightly and shake. Let it marinate for 15 minutes.

Step 2

Heat 1 tablespoon of vegetable oil in a wok over medium heat. Remove the chicken from the marinade and fry for 4 minutes. Transfer to a plate and keep warm.

Step 3

In the wok, add the remaining oil and sauté the finely chopped onion and finely chopped carrot for 2 minutes. Add the thinly sliced mushrooms and sauté for another 3 minutes. Pour in the marinade from the chicken, coconut milk, and fish sauce. Bring to a boil, breaking up any lumps. Reduce the heat and simmer for 1 minute.

Step 4

Add the chicken, season with salt, and cook for another 1 minute.

Step 5

Serve, garnished with bean sprouts and cilantro.
