Thai Eggplant and Tofu Snack Recipe

Ingredients
- Eggplants 4 pieces
- Tofu 5 oz
- Mild Chili Spice 1 piece
- Lime 1 piece
- Onion 1 head
- Fish Oil 5 tablespoons
- Brown Sugar 2 tablespoons
- Garlic 1 clove
- Salt to taste
- Vegetable Oil 0 fl oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Fry the eggplants whole in a skillet over low heat until they are slightly soft inside.
Step 2
Place the garlic, peeled chili pepper, and chopped onion into a blender. Squeeze the lime juice in, add 2 tablespoons of sugar and fish sauce. Blend everything together.
Step 3
Heat a tablespoon of vegetable oil in a wok. Pour the sauce into the skillet and bring it to a boil. Slice the eggplants into small pieces, leaving the skin on. Add them to the sauce along with the coarsely chopped tofu. Mix well, cover with a lid, and let it sit for a couple of minutes. The dish is ready.
