
Thai Curry with Shrimp and Mushrooms

Served with rice and cilantro. You can substitute the curry paste with 3–4 teaspoons of powder.
Ingredients
- Red Curry Powder 3 spoons
- Potato 2 pieces
- Butternut Squash 1 piece
- Coconut Milk 15 fl oz
- Champignons 5 oz
- Marinated cherries 5 oz
- Peeled Cooked Shrimp 5 oz
- Chinese green beans 5 oz
Step-by-Step Guide
Step 1
In a deep skillet, heat 1 tablespoon of olive oil and curry paste over high heat for one minute. Add coconut milk, stir, and bring to a boil. Reduce the heat to low.
Step 2
Add the diced pumpkin and potatoes, and sauté for about 10 minutes.
Step 3
Add the remaining vegetables and mushrooms, and simmer over medium heat for another 5 minutes (if the sauce becomes too thick, you can add a little milk (cow's milk is fine)).
Step 4
Add the shrimp and simmer until cooked through, about 3 to 5 minutes.
