  • Bacon 5 oz
  • "Petelinka Thigh Fillet" 5 lbs
  • Onion 4 pieces
  • 10% cream 5 fl oz
  • Ocean salt to taste
  • Ground Black Pepper to taste
  • Vegetable Oil to taste

Step-by-Step Guide

Step 1

Chop the onion coarsely and sauté until lightly golden. Allow to cool before adding to the mixture.

Step 2

Pass the meat from the chicken thighs, bacon, and cooled onion through a meat grinder.

Step 3

Then, knead the mixture by hand, season with salt and pepper, add the cream, and let it rest for half an hour to bind well. The ground meat should absorb the juices: it acts like a marinade, making the patties juicier. This mixture can easily be frozen until you suddenly crave patties.

Step 4

Moisten your hands and shape the patties.

Step 5

Fry them until golden brown and then transfer to an oven preheated to 180–390°F. This will enhance the flavor. To check for doneness, it's best to break a patty and taste it.
