In a large bowl, mix the potatoes, onion, cheese (reserve 1/4 for topping), salt, and freshly ground black pepper. Add the sour cream and gently mix.
Step 2
Grease a baking dish (one large or 4–6 small ones) with oil. Spread the potato mixture without smoothing the surface. Sprinkle with the reserved cheese and bake in the oven at 355°F for 25–30 minutes until golden brown.
