Ingredients
- Grated Ginger Root 1 tablespoon
- Garlic 4 cloves
- Vinegar essence 5 fl oz
- Salt to taste
- Coriander essential oil 1 tablespoon
- Toasted Cumin Seeds 1 tablespoon
- Mild Chili Spice 1 teaspoon
- Olive Oil 5 fl oz
- Chutney to taste
- Red drum fish 5 oz

Step 1
In a blender, combine ginger, garlic, vinegar, salt, coriander, cumin, and chili pepper until a smooth paste forms.
Step 2
Spread the resulting paste over the fillet and marinate in the refrigerator for 1-2 hours.
Step 3
Preheat the grill to high temperature.
Step 4
Place the marinated fillet on foil, which should be placed in a grilling pan, and grill for 8-10 minutes until the fish begins to flake when pressed with a fork.
Step 5
Serve with chutney.
