
Tabbouleh with Cilantro

Description
This interpretation may even be more expressive than the classic one. The more aromatic spices involved in the preparation, the better. In addition to fresh cilantro, we recommend adding toasted and ground coriander seeds.
Ingredients
- Bulgur 5 oz
- Ground coriander 0 oz
- Black Cumin (Cumin) 0 oz
- Ground clove 5 pieces
- Spanish onions 5 oz
- Cucumbers 5 oz
- Tomatoes 5 oz
- Cilantro 0 oz
- Parsley 0 oz
- Fresh Mint 0 oz
- Scallions 0 oz
- Meyer Lemon Juice 0 fl oz
- Olive Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Thoroughly rinse the bulgur in several waters. Drain it. Place it in a bowl and soak in cold water (which should cover the grain by 2.5 cm) for one hour.
Step 2
While the bulgur is soaking, toast the coriander seeds, cumin, and fennel in a small skillet for 1-2 minutes. Allow them to cool completely and grind together with the cloves in a mortar or spice grinder.
Step 3
Mix the red onion, ground spices, and salt in a large bowl, and let it sit while the bulgur is soaking for at least 30 minutes.
Step 4
Drain the bulgur and squeeze it well. Add it to the bowl with the onion and spices. Also add the cucumbers, tomatoes, herbs, green onion, lemon juice, olive oil, and cayenne pepper. Mix everything well and season with salt. Serve immediately.
