
Sweet Rice with Cilantro Pesto

Description
This is a big, lazy vegetable chunk of sushi. The most important ingredient here is the rice — small and round — along with vinegar.
Ingredients
- Sushi Rice 10 oz
- Rice Vinegar for Sushi 0 fl oz
- Raw cane sugar 2 spoons
- Cilantro 5 oz
- Toasted Sesame 0 oz
- Sesame Oil 0 fl oz
- Garlic 2 cloves
- Meyer Lemon Juice 1 tablespoon
- Leek 0 oz
- Soy Sauce 1 tablespoon
- Carrot 0 oz
Step-by-Step Guide
Step 1
Pour water over the rice until it's about an inch deep, let it sit for about five minutes, then cook it without adding any seasonings, not even salt. Cook for 14 to 18 minutes, depending on the type of rice.
Step 2
Mix the sugar with sushi vinegar and pour the mixture over the rice when it's ready, gently folding it in with a soft spatula, taking care not to mash the rice.
Step 3
In a blender, combine cilantro, sesame seeds, oil, lemon juice, soy sauce, and garlic. Serve the rice with this sauce, along with leeks and carrots cut into thin strips.
