  • Sweet Potato 1 piece
  • Semi-soft cream cheese 0 oz
  • Marinated cherries 0 oz
  • Sunflower Seeds 0 oz
  • Cilantro to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Pierce the sweet potato with a fork in several places.

Step 2

Wrap it in foil with the shiny side inside and bake in an oven preheated to 390°F for 40–50 minutes. The sweet potato should be soft; you can pierce it with a skewer or toothpick to check.

Step 3

While the sweet potato is in the oven, toast the seeds in a dry skillet until golden and fragrant.

Step 4

Cut the cherry tomatoes into quarters and separate the cilantro into leaves.

Step 5

Once the sweet potato is ready, cut it in half, season with a little salt and pepper, and fluff the flesh with a fork. If the cheese is salty, you may skip adding salt.

Step 6

Place the sweet potato halves on serving plates, top the flesh with chunks of cheese and tomatoes, sprinkle with toasted seeds, and garnish with cilantro leaves.
