Description

Instead of meat, you can use chicken or prepare a vegetarian version by increasing the amount of lentils.

Ingredients

  • Pumpkin 20 oz
  • Meat 20 oz
  • Potato 1 piece
  • Onion 2 heads
  • Lentils 5 oz
  • Raisins 1 tablespoon
  • Prunes 1 piece
  • Garlic 2 cloves
  • Cilantro 1 teaspoon
  • Grated Ginger Root to taste
  • Mild Chili Spice 1 piece
  • Cilantro to taste
  • Salt to taste
  • Olive Oil 2 tablespoons

Step-by-Step Guide

Step 1

Cut the meat into cubes (if using beef, it's better to take the shoulder). Heat oil in a pan. Sauté the meat in small portions over medium heat and transfer it to a deep pot, preferably a saucepan, cauldron, or Dutch oven. Add a little water if the beef has released little juice, season with salt, add the rinsed prune, cover with a lid, and simmer on low heat for about 1 hour (depending on the meat).

Step 2

Peel and slice the onion into feathers. Peel and chop the garlic and ginger (grate the ginger finely).

Step 3

Slightly crush the cilantro in a mortar.

Step 4

Remove the seeds from the chili pepper and cut it into rings or thin strips. If you want a spicy stew, add the pepper at the very beginning of cooking with the meat; if you prefer a mild heat, do not cook it, and add it to the finished dish.

Step 5

Heat the oil, add the crushed cilantro, and sauté for a minute, then add the garlic and almost immediately the onion, so the garlic doesn't burn.

Step 6

Sauté the onion for about 5 minutes, add the ginger, and after 3 minutes, add the rinsed raisins. Sauté everything together until the onion takes on a caramel color.

Step 7

Cut the pumpkin into large cubes and sauté in a heated pan with oil. Do the same with the potato. The potato should be soft after frying, while the pumpkin should remain crunchy.

Step 8

Rinse the lentils. Add the onion with raisins and spices, and the lentils to the meat, and simmer together for 15 minutes.

Step 9

Carefully mix the stew with the sautéed pumpkin and potato, season with salt if necessary, and leave on low heat for another 7 minutes until the lentils are soft.

Step 10

If you want the stew to look more appealing, boil the lentils separately for about 20-25 minutes and only mix them with the vegetables and meat at the end.

Step 11

Serve, garnished with cilantro leaves if desired.
