Ingredients
- Onion 1 piece
- Pork Blood 10 oz
- Green peppercorns 1 piece
- Carrot 1 piece
- Pineapple 10 oz
- Bamboo shoots 0 oz
- Wheat Flour 5 oz
- Potato protein 3 spoons
- Baking Powder 1½ spoons
- Sugar 5 oz
- Vegetable Oil 5 fl oz
- Garlic 2 cloves
- Champagne Vinegar 5 fl oz
- Peach Juice 5 teaspoons
- Passata Tomato Sauce 4 spoons
Step-by-Step Guide
Step 1
To make the dough, mix 1 tablespoon of starch, flour, and baking powder. Add 1 tablespoon of oil and enough water to form a thick dough. Cut the pork into 1 cm cubes.
Step 2
Pour the remaining vegetable oil into the wok and heat it until it starts to shimmer. Dip the pork cubes in the batter and lower them into the hot oil until cooked through. Remove with a slotted spoon and place on paper towels to drain excess oil.
Step 3
Drain all the oil from the wok, leaving 1 tablespoon, and return it to the heat. Add the chopped onion, green pepper (cut into strips), pineapple (diced), small carrot (cut into sticks), rinsed and halved canned bamboo shoots, and stir-fry for 1-2 minutes. Remove with a slotted spoon and set aside.
Step 4
For the sauce, mix brown sugar, 2 tablespoons of cornstarch (or cornstarch – maize starch), crushed garlic, vinegar, tomato paste, and pineapple juice, then pour it into a wok. Bring to a boil, stirring until it thickens and becomes clear. Keep it on the heat for one minute.
Step 5
Add the sautéed pork and vegetables. Cook for another 1–2 minutes and transfer to a plate. Serve with rice or noodles.
