Sweet and Sour Pork and Oyster Meatballs
Ingredients
- Vegetable Oil 3 cups
- Pork Mince 10 oz
- Fresh Oysters 5 oz
- Garlic 6 cloves
- Shallot 2 heads
- Ginger 5 oz
- Egg white 1 piece
- Corn Starch 1 cup
- Chili jam 4 tablespoons
- Soy Sauce 2 tablespoons
- Medium-dry sherry 2 tablespoons
- Sugar 2 tablespoons
- Rice Vinegar for Sushi 1 tablespoon
- Rice to taste
Step-by-Step Guide
Step 1
In a wok, heat the oil. Mix the pork, finely chopped oysters, half of the minced garlic, shallots, and ginger. Add the beaten egg white and mix well. Form 13 small meatballs and set aside. In a bowl, mix the cornstarch and 60 ml of water.
Step 2
First dip the meatballs in the cornstarch, then place them in the pan and fry on all sides. Place the fried meatballs on paper towels to drain excess oil.
Step 3
Leave 45 ml of oil in the pan, drain the rest. Place the pan over medium heat. Sauté the remaining minced garlic, then add the chili paste, soy sauce, sherry, sugar, and vinegar.
Step 4
Bring the mixture to a boil, reduce the heat, and cook until thickened. Add the fried meatballs to the sauce and cook for 2-3 minutes. Serve hot with pre-cooked rice. Enjoy your meal!
