Sweet and Sour Carp
Ingredients
- Carp 10 oz
- Garlic 3 cloves
- Apple Wine 1 teaspoon
- Sesame Oil 1 tablespoon
- Pork fat 5 oz
- Fish Oil 5 fl oz
- Corn Starch 5 tablespoons
- Sugar 5 oz
- Passata Tomato Sauce 5 tablespoons
- Vinegar essence 0 fl oz
- Salt to taste
Step-by-Step Guide
Step 1
Place the carp fillet (black or mirror) on a cutting board skin side down and make diagonal cuts without damaging the skin (should result in 10 pieces).
Step 2
Make a grid of cuts on each piece and pour a mixture of wine, salt, and cornstarch (3 tablespoons) over them, then remove excess cornstarch from the pieces.
Step 3
In a bowl, mix vinegar, sugar, tomato paste, broth, and the remaining cornstarch solution.
Step 4
Heat a pan over high heat, melt the pork fat, and heat it almost to boiling, then place the fish skin side down. Fry until browned, then transfer to a plate.
Step 5
Drain most of the fat from the pan and place it back on the heat, then sauté the finely chopped garlic in the remaining fat (25 ml). Add the spice mixture and sesame oil. Pour the resulting sauce over the fish and serve.
