Summer Zucchini Sauté in the Microwave
Ingredients
- Courgette 1 piece
- Orange Bell Peppers 1 piece
- Potato 1 piece
- Spanish onions 1 piece
- 20% Sour Cream 5 oz
- Garlic 2 cloves
- Salt to taste
- Olive Oil 1 tablespoon
- Cheese Spread 0 oz
- Spices to taste
Step-by-Step Guide
Step 1
Slice the zucchini into rounds, and cut the onion into rings or half-rings (I prefer white onion – it's milder, but regular onion is also tasty). Place in a glass dish, season with salt and pepper, and drizzle with a little olive oil (you can also add regular refined oil or butter). Put it in the microwave for 10 minutes.
Step 2
Cut the tomatoes and bell pepper into half-moons. Remove the zucchini from the microwave and add the chopped vegetables. I also add fresh peas when available. Microwave again for 7 minutes.
Step 3
Mix the sour cream with the crushed garlic. Add the grated cheese, mix everything again, and microwave for another 5-7 minutes. You can also make it without cheese; it's very tasty too.
Step 4
I cook on the highest microwave power – 900 W. You can add herbs to taste. That's it, the sauté is ready! It can be enjoyed hot, but my husband and I prefer it cold.
