Summer Vegetable Stew in a Slow Cooker
Ingredients
- Eggplants 1 piece
- Orange Bell Peppers 2 pieces
- Young zucchini 2 pieces
- Salad Potatoes 5 pieces
- Carrot 1 piece
- Onion 2 pieces
- Salt to taste
- Passata Tomato Sauce 2 tablespoons
- Garlic 1 clove
Step-by-Step Guide
Step 1
Peel the carrot and cut it into large pieces. Cut the onion, potatoes, zucchini, eggplant, and pepper into large pieces as well.
Step 2
Layer in the slow cooker in the following order: onion (setting — sauté), then switch to the stew mode, add the carrot, after 10 minutes add the potatoes, after 20 minutes add the zucchini, eggplant, and pepper. After another 15–20 minutes, add the tomato paste and finely chopped clove of garlic.
Step 3
Stew until cooked through. Add salt.
