  • Vegetable Broth 0 fl oz

  • Grated Parmesan cheese 0 oz

Step-by-Step Guide

Step 1

First, prepare the dough for the ravioli. The dough is the same as for pasta. Flour (50 g), olive oil (3 g), chicken egg (1 piece), sea salt (a pinch). Mix all the ingredients, cover with cheesecloth and plastic wrap, and refrigerate for 1 hour. Roll out the prepared dough thinly (0.5 mm), place the filling, and form the ravioli.

Step 2

Filling for the ravioli: to prepare the filling, you will need the following ingredients: spinach (5 g), ricotta (5 g), parmesan cheese (5 g), mascarpone cheese (5 g), half a yolk, salt and pepper (to taste). Rinse the spinach and let it dry, then add all the ingredients and mix.

Step 3

Roll out the prepared dough thinly (0.5 mm), place the filling, and form the ravioli.

Step 4

Sauce for the ravioli: sauté the garlic in olive oil, adding the tomato sauce and vegetable broth. Cut the pink tomatoes into medium cubes and add them to the other ingredients. Cook everything together for 3-5 minutes and add the basil.

Step 5

Cook the ravioli for 3 minutes over low heat in salted water. Add the cooked ravioli to the sauce. Before serving, add grated parmesan cheese and olive oil. Garnish with watercress.
