Step-by-Step Guide
Step 1
Rinse the sturgeon under cold water, then remove the skin and cartilage. Cut the fish into large pieces of 6x6 cm. Place it in a marinating container. Add the sliced onion, chopped herbs, juice from half a lemon, and season with salt and pepper to taste, then refrigerate. The sturgeon shashlik does not need to marinate for long—one to two hours is sufficient.
Step 2
Before cooking, when the coals are ready, carefully thread the fish onto skewers. The sturgeon shashlik cooks quickly. During cooking, turn the skewer several times. You can drizzle it with the marinade juice.
Step 3
It is best to serve the sturgeon shashlik on lettuce leaves, with fresh herbs, lemon, vegetables, and olives.
