Ingredients

  • Fish 20 oz
  • Pickles 2 pieces
  • Fresh Mushrooms 5 oz
  • Wheat Flour 1 tablespoon
  • Cucumber Brine 1 tablespoon
  • Salt to taste
  • Vegetable Oil 1 tablespoon
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Prepare and cut the fish into pieces. Peel the pickles, cut them lengthwise, remove the seeds, and cut each half crosswise into three parts. Clean, rinse, and slice the fresh mushrooms (such as porcini or champignons).

Step 2

Place the pieces of fish in a shallow pot, layering the mushrooms and pickles between them. Season everything with salt and pepper, then pour in 1 1/2 cups of broth (or water), add a tablespoon of cucumber brine, cover, and cook for 15-25 minutes. After that, drain the broth into another pot and place it on the heat.

Step 3

When about a cup of broth remains, add a heaping tablespoon of flour mixed with an equal amount of oil, and stir while boiling for another 3-4 minutes. Remove the resulting sauce from the heat, add a piece of butter, and stir again to combine the butter with the sauce, add salt, and strain.

Step 4

Serve the fish on a warmed dish. Top each piece with mushrooms and pickles and drizzle with the strained sauce. Boiled potatoes can be served on the side.
