Stuffed squid with zucchini, mushrooms, and potatoes
Ingredients
- Courgette 1 piece
- Squid 4 pieces
- Salad Potatoes 2 pieces
- Pickled Chanterelles 15 oz
- Olive Oil 3 tablespoons
- Mayonnaise 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
- Onion 1 head
Step-by-Step Guide
Step 1
Boil two large potatoes and cut them into cubes.
Step 2
Sauté finely chopped onion, cut the mushrooms, and fry them on low heat for about 5 minutes. Cut the zucchini into cubes and sauté for 3-4 minutes.
Step 3
Mix all the filling ingredients, adding a little mayonnaise, salt, and pepper.
Step 4
Wash and clean the squid from the membrane, then stuff them with the vegetable mixture. Brush with olive oil, place each squid on a piece of foil, wrap tightly, and bake in the oven at 390°F for about 20 minutes.
