Stuffed Squid with Tomato Sauce

Ingredients

  • Squid 0 lbs
  • Pitted olives 8 pieces
  • Pickled Chanterelles 15 oz
  • Vegetable Oil 5 fl oz
  • Soy Sauce ¼ teaspoon
  • Chopped Sage Leaves 2 tablespoons
  • Oregano to taste
  • Ground Black Pepper to taste
  • Tomatoes 2 pieces
  • Breadcrumbs 2 tablespoons
  • Garlic 2 cloves

Step-by-Step Guide

Step 1

Leave the large squid bodies for stuffing, finely chop the rest or pass them through a meat grinder, and mix with finely chopped olives, mushrooms, and parsley. Add oil, soy sauce, and breadcrumbs.

Step 2

Stuff the squid bodies with the prepared filling, seal the edges, and sew them up (you can also secure them with toothpicks).

Step 3

For the sauce, cut the tomatoes into wedges. Mince the garlic and sauté it over low heat for 2 minutes, then add the tomatoes and sauté for another 2 minutes.

Step 4

Combine the squid with the sauce, add a little salt, and simmer over low heat for about 20 minutes. Then season with salt and pepper, sprinkle with oregano, and heat for another 5 minutes.

Step 5

When serving, place the squid on a plate and drizzle with the sauce that formed during frying.
