Stuffed Squid with Mushrooms and Cheese
Ingredients
- Oyster Mushrooms 10 oz
- Squid 4 pieces
- Shallot 1 piece
- Mayonnaise 4 tablespoons
- Semi-soft cream cheese 3 tablespoons
- Garlic 2 cloves
- Grated Pecorino Pepato Cheese 4 tablespoons
Step-by-Step Guide
Step 1
Chop the mushrooms and shallot into small pieces.
Step 2
Melt butter in a skillet and add the oyster mushrooms with the shallot. Sauté over high heat for 5-6 minutes, stirring occasionally.
Step 3
Then add the cream cheese and mayonnaise. Reduce the heat and mix well.
Step 4
Add finely chopped garlic and season with salt.
Step 5
After a minute, mix in the grated cheese and remove from heat.
Step 6
Place the squid on a dry, hot grill pan. Sear for one and a half minutes on each side.
Step 7
Transfer the squid to a convenient surface and let cool.

Stuff the squid with the filling.

Arrange the squid in a baking dish.
Step 10
Cover with foil and place in a preheated oven at 300°F for 10-15 minutes.
Step 11
Before serving, let the dish cool for about 5 minutes.
