Stuffed Squash with Meat Filling
Ingredients
- Butternut Squash 4 pieces
- Coarse Salt to taste
- Ground Black Pepper to taste
- Olive Oil 2 tablespoons
- Orange Bell Peppers 1 piece
- Garlic 1 clove
- Green onion tops 2 pieces
- Passata Tomato Sauce 2 tablespoons
- Mild Chili Spice 1 teaspoon
- Lean Beef 10 oz
- Blanched frozen corn 1 cup
- Grated Pecorino Pepato Cheese 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 390°F.
Step 2
Cut each squash in half lengthwise. Trim a round bottom from each half so they stand well. Scoop out half of the flesh with a spoon and chop it finely.
Step 3
Place the squash halves on a baking sheet, cut side down, and season with salt and pepper.
Step 4
In a large skillet, heat the olive oil over medium heat. Add the chopped squash flesh, finely chopped bell pepper, sliced white parts of the green onions, and minced garlic. Season with salt and pepper. Cook, stirring, for 3–4 minutes until the peppers are soft. Add the tomato paste and chili powder. Cook for another minute. Then add the ground beef and sauté for 2–3 minutes. Remove from heat and stir in the corn and 0.25 cup of Parmesan. Season with salt and pepper.
Step 5
Fill the squash halves with the mixture and sprinkle with the remaining Parmesan. Cover with foil and bake until tender for 30–35 minutes. Then uncover and brown for another 7–10 minutes. Sprinkle with finely chopped green onions and serve immediately.
