Stuffed Sea Cucumbers

Ingredients

  • Poultry 5 oz
  • Fish 5 oz
  • Onion 1 head
  • Pork fat 4 tablespoons
  • Scallions 0 oz
  • Starch film 2 teaspoons
  • Egg white ½ piece
  • Grated Ginger Root 0 oz
  • Sake 2 tablespoons
  • Soy Sauce 2 teaspoons
  • Sodium glutamate 2 teaspoons
  • Salt to taste
  • Wheat Flour to taste
  • Sea Cucumbers 0 oz

Step-by-Step Guide

Step 1

To prepare the filling, cut the chicken and fish fillets (without bones and skin) into pieces and pass them through a meat grinder with a fine mesh two or three times.

Step 2

After that, add the juice of fresh ginger and onion, rice wine, melted pork fat, egg whites, monosodium glutamate, salt, and starch diluted in cold water (1:1) to the filling and mix thoroughly.

Step 3

Store the prepared filling in a cool place.

Step 4

Remove the cooked sea cucumbers from the water and wipe the bodies inside and out with a clean napkin or towel, then sprinkle with flour to remove excess moisture.

Step 5

Fill each body with the prepared filling, then tightly wrap it in a napkin to distribute the filling more evenly.

Step 6

Cut the stuffed sea cucumbers into pieces of equal length (no more than 2 cm), place them filling side down in a dish, set it in a special sieve, and steam until semi-cooked.

Step 7

When serving, place the pieces of stuffed sea cucumbers on a plate and drizzle with sauce.

Step 8

To prepare the sauce, pour the seasoned broth into a pan, add monosodium glutamate, and bring to a boil, then skim off the foam and gradually add starch diluted in cold water (1:2), and add melted pork fat.
