Ingredients

  • Sea Bass 5 lbs
  • Lemon 1 piece
  • Cotton Oil 5 tablespoons
  • Butter 0 oz
  • Onion 1 head
  • White bread 0 oz
  • Milk 5 fl oz
  • Fresh Mushrooms 5 oz
  • Olive Oil 2 tablespoons
  • Chopped Sage Leaves 1 teaspoon
  • Chicken Egg 1 piece

Step-by-Step Guide

Step 1

Season the fish inside and out with salt.

Step 2

For the stuffing, place the bread in a bowl, pour hot milk over it, and let it soak.

Step 3

Meanwhile, place finely chopped mushrooms, 10 g of butter, a few drops of lemon juice, and a pinch of salt in a pot, cover, and cook over medium heat for 6 minutes.

Step 4

In a skillet, heat corn oil, add the finely chopped onion, and sauté over low heat, stirring, for about 8 minutes or until the onion turns golden. Remove the skillet from heat.

Step 5

Preheat the oven to 355°F. Gently squeeze the soaked bread and add it to the bowl with the onion, mushrooms, chopped parsley, lightly beaten egg, and a pinch of salt. Mix all the stuffing ingredients well and fill the fish with it.

Step 6

Sew up the fish with thin twine, leaving long ends on both sides to make it easier to remove the thread from the cooked fish. Alternatively, secure it with wooden sticks.

Step 7

Pour corn oil into a baking dish and place the fish in it. Make two shallow cuts on the top side. Drizzle the fish with lemon juice, sprinkle with salt, and place the remaining pieces of butter under the fish. Bake, basting occasionally with the juices, for 20 minutes, until the flesh flakes easily. Remove the threads or sticks and serve the fish immediately.
