
Stuffed Sardines on Skewers

Description
Instead of pine nuts, you can use almonds or walnuts. If sardines are difficult to find, try herring or large sprats.
Ingredients
- Sardines 4 pieces
- Pistachios 1 tablespoon
- Lemon 1 piece
- Raisins 1 tablespoon
- Fresh Bay Leaf 10 pieces
- Breadcrumbs 5 oz
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Clean the sardines, carefully remove the bones, wash them, and salt.
Step 2
In a pan, sauté the breadcrumbs, raisins, and nuts in a little olive oil until golden brown.
Step 3
Coat each fish in the mixture. Use the same mixture to fill the inside of the sardines and roll them up. Thread the rolls onto skewers, alternating with bay leaves and lemon wedges. Place on a baking sheet or grill surface, drizzle with olive oil and lemon juice. Bake in a preheated oven at 355°F for 15-20 minutes.
