Stuffed Potatoes
Ingredients
- Potatoes 4 pieces
- Cheese 5 oz
- Canned Corn 5 oz
- Sweet Pepper 5 oz
- Italian Herb Mix to taste
Step-by-Step Guide
Step 1
Preheat the oven to 200°C and bake the potatoes for about 1 hour until cooked through. Allow to cool completely.
Step 2
To stuff the baked potatoes, preheat the oven to 200°C. Cut the potatoes in half. Carefully scoop out the insides with a spoon, being careful not to damage the skin (you should create a boat shape).
Step 3
Mash the potato with a fork until smooth. Add the cheese, corn, and pepper, and mix well. Gently tear the leaves from the herbs. Tear larger leaves into small pieces. Add to the cheese and potato mixture.
Step 4
Using a spoon, carefully fill the potato boats with the mixture. Sprinkle a little grated cheese on top and place on a baking tray.
Step 5
Using oven mitts, place the tray in the oven and bake for 10-15 minutes until golden brown.
