Stuffed Peppers with Scallops

Ingredients
- Orange Bell Peppers 10 pieces
- Scallops 15 oz
- Rice ¼ cup
- Onion 3 heads
- Clarified Butter 2 tablespoons
- Passata Tomato Sauce 2 tablespoons
- Green peppercorns to taste
- Sour Cream 5 oz
- Herbs to taste
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the filling: sauté finely chopped scallops and onion in clarified butter.
Step 2
Add tomato paste and sauté everything together for a bit longer.
Step 3
Remove seeds and partitions from the bell peppers.
Step 4
Then wash them, blanch, and fill with the filling.
Step 5
Transfer to a bowl, add cooked rice, and mix.
Step 6
Simmer the stuffed peppers in salted water with pepper for 15–20 minutes.
Step 7
Before serving, add sour cream on top.
Step 8
Drizzle the dish with its own sauce and sprinkle with herbs.
