Stuffed Peppers with Capers, Raisins, and Pine Nuts
Ingredients
- Orange Bell Peppers 4 pieces
- White bread 5 oz
- Olive Oil 10 fl oz
- Anchovy fillet 4 pieces
- Olives stuffed with lemon 12 pieces
- Garlic 2 cloves
- Capers 30 pieces
- Pistachios 0 oz
- Raisins 0 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Soak the bread in milk.
Step 2
Mix the soaked bread with all the other ingredients. Add pepper. Optionally, add salt.
Step 3
Cut the peppers in half lengthwise, remove the seeds and core.
Step 4
Fill the pepper halves with the prepared filling, drizzle with olive oil, cover with a lid, and bake in a low-temperature oven for 1 hour.
Step 5
Occasionally drizzle with olive oil.
Step 6
Serve hot or cold.
