For this dish, it's best to use the largest mushrooms you can find.

Ingredients

  • Champignons 0 lbs
  • Garlic 5 cloves
  • Olive Oil 4 spoons
  • Suluguni Cheese 5 oz
  • Breadcrumbs 4 spoons
  • Dry White Wine 5 fl oz
  • Spices to taste
  • Chicken Egg 2 pieces
  • Basil to taste

Step-by-Step Guide

Step 1

Rinse the mushrooms. Separate the caps from the stems. Finely chop the mushroom stems. Mince the garlic (important: chop it, do not crush it in a press). In hot olive oil, sauté the garlic until golden, then remove the garlic and in the same oil, sauté the mushroom stems until cooked. Remove from heat and let cool.

Step 2

Grate the cheese, mix it with the eggs, then add this mixture to the mushrooms. Sprinkle everything with breadcrumbs and finely chopped basil. Add spices to taste. Mix well. If the mixture is too thick, add a little wine.

Step 3

Preheat the oven to 390°F. Stuff the mushroom caps with the filling and place them on a baking tray or roasting dish greased with olive oil. Drizzle with wine and put in the oven. Bake for about 30 minutes, occasionally drizzling with wine. They can be served hot or cold.
