Stuffed Fish - Gefilte Fish
Ingredients
- Carp 5 lbs
- Onion 4 heads
- Beetroot 2 pieces
- Carrot 4 pieces
- Chicken Egg 4 pieces
- Nut crumb 5 oz
- Green peppercorns 6 pieces
- Bay leaf 1 piece
- Sugar to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Cut the fish into portion-sized pieces. Carefully remove the fillets and bones without damaging the skin.
Step 2
Soak the white bread in milk or water, then squeeze out excess liquid. Pass the fish fillet, one onion, and carrot, along with the bread, through a meat grinder. Add eggs, salt, sugar, and pepper to the mixture, and mix everything thoroughly. If necessary, add a little water to the filling.
Step 3
Fill the pieces of fish and the head with the prepared filling.
Step 4
Place fish bones, rinsed onion skins, sliced onions, and thinly sliced carrots and beets at the bottom of a pot or a sturdy aluminum saucepan. On top of these, lay pieces of stuffed fish, followed by a layer of vegetables. Add bay leaves, peppercorns, salt, pepper, and sugar. Pour in cold water until it completely covers the fish. Simmer on low heat for 1.5 to 2 hours.
Step 5
Arrange the cooked fish with vegetables on a plate, pour over the strained fish broth, and place in the refrigerator to set. Serve cold with horseradish or mustard.
