Stuffed Eggplant

Ingredients

  • Eggplants 2 pieces
  • Ground meat 15 oz
  • Fresh Mushrooms 5 oz
  • Melted Cheese 5 oz
  • Garlic 4 cloves
  • Onion 1 head
  • Passata Tomato Sauce 0 oz

Step-by-Step Guide

Step 1

Wash the eggplants and cut them lengthwise, carefully scoop out the flesh without damaging the walls, and make light incisions.

Step 2

Place the empty eggplants in the oven for 10-15 minutes at 180-390°F.

Step 3

Now for the filling, take the flesh from the eggplants and chop it finely, heat a skillet and lightly sauté the eggplant flesh, add the ground meat, some chopped mushrooms, onion, and garlic, then add the tomato paste and simmer until cooked. Don't forget to add salt and pepper to taste.

Step 4

Remove the eggplants from the oven and fill them with the meat mixture, do the same with the mushrooms by cutting off the stems at the base. Top with thinly sliced mozzarella or any other cheese. Place in the oven until ready, for 15-20 minutes at 355°F.

Step 5

Sprinkle with herbs before serving.
